The publication is based on the books of Maria Martsishevska, printed in Kyiv in the mid-19th century:
• “Dry Confitures in the Kyiv Style” (1859) — reproduced in this book in full;
• “The Noble Cook” (1857) — selected.
Maria Martsishevska explored the secret of making the famous Kyiv confitures and told about other gastronomic traditions of Kyiv in the mid-19th century. Maria Martsishevska’s books were real bestsellers. On the title page of one of the reprints of “The Noble Cook” (Kyiv, 1901) we read — “fifth edition”. This book will make you fall in love at first sight. Instead of the expected complex dry explanations and “outdated” recipes, you will find “live” descriptions and culinary instructions that impress with their usability, practicality, novelty of tastes, and interesting culinary solutions. We often look for new tastes and, oddly enough, find them in old cookbooks. This book-journey to the gastronomic Kyiv of the 19th century will tell about lost tastes and, we hope, will encourage and help to recreate them.
